Olivier and Francine Savary have been vignerons in Maligny, 5 miles from Chablis, since 1984. From a family with deep roots in viticulture but without any vineyard land, Oliver was determined to follow in the footsteps of his grandparents. Following a stint at wine school in Dijon, he and Francine took some vineyard land en mettayage (share cropping) in the Chablis and Petit Chablis appellations. The couple initially sold off the majority of their production in bulk, but as the vineyard holding and their experience increased they begun bottling under their own label. Orginally a single hectare, the domaine now comprises 19 hectares across 5 appellations in Chablis and Chablis 1er Cru, all of them on the clay-limestone hillsides of the Kimmeridgian chain, famous for growing dazzling, complex Chardonnay.

Savary’s holding, particularly in village Chablis, is quite fragmented, lying in several parcels on the slopes on either side of the village of Maligny. They therefore bring grapes together to be blended into two separate bottlings, a village wine cuvee and a separate cuvee from the oldest vines, the latter being raised in oak demi-muids. He also bottles two extraordinary premier crus from the Vaillons and Fourchaumes vineyards. These are quintessential Chablis, with aromas of ancient crushed shells, citrus and apples, and a pronounced, racy mineral structure.

Demand is such here that we are currently only able to secure small quantities of the village wine. Its fabulous complexity belies its modest appellation.
