CHAMPAGNE PIERRE PAILLARD, Bouzy Grand Cru

Benoît Paillard and his sons Antoine & Quentin represent the seventh & eighth generations of their family to make wine in the esteemed (and appropriately named) Grand Cru village of Bouzy on the south-eastern tip of the Montagne de Reims, where they preside over 11 hectares of Grand Cru vines spread over 30 plots, many of them owned by the family for over 200 years. The average age of the vines is around 30 years, with the oldest plots at 60 years. The long slopes at Bouzy are south-facing, and lie on chalk and clay marls at varying depths over a solid chalk sub-strata, providing fruit of varying and intriguing characteristics which are exploited and elaborated with great care and attention to fine detail. Viticulture is solidly organic (though uncertified, as the family retain the option to spray against mildews and will not use the organically permitted but poisonous copper sulphate), with no use of synthetic fertilisers, herbicides or pesticides, with grassing between the vines, and they practice selection massale, selecting replacement vine stock from cuttings of their own best ‘mother’ vines, thus preserving the unique genetic profile of the vineyard. The grapes, which are 60% Pinot Noir and 40% Chardonnay, are carefully hand picked at optimum ripeness.

Bouzy gives Champagnes which are notably smooth, creamy and full, with rich aromas and a fascinating ability to age – a recent tasting with the family included the current vintage, 2004, followed by 2002, 2000, 1982, 1976 and 1971, each of them quite remarkably fresh, and each showing a rangle of variously intriguing and complex aromas and flavours. The non-vintage Grand Cru represents the varietal makeup of the vineyard at 60/40% Pinot Noir & Chardonnay, and is based on the 2009 vintage, with 2008 reserve wines, while the racily fleshy yet supremely elegant 100% Pinot Blanc de Noirs comes from a single plot, Les Maillerettes. The elegant, mineral Blanc de Blancs likewise comes from a single plot of Chardonnay.

Attention to detail extends to the back-labelling of each cuvée with the vintage makeup of the wine, the date of disgorgement, and the dosage.
