The Domaine de Fayolle, Fils et Fille at Gervans, owned and managed by brother and sister Laurent Fayolle and Céline Nodin, was created in 2002 when their father and uncle divided the family estate that had been established four generations previously. The vineyard is planted to old vines, with an average age of around forty years, most of which are in the commune of Crozes-Hermitage itself and are mainly on the better hill slopes rather than the flatter land at the opposite side of the appellation. Culture in the vineyard is increasingly reasoned, with minimal and decreasing use of herbicides and only organic fertiliser. Vinifications are traditional, with destemming and a long cuvaison in open wooden tanks, and all the wines are aged in cask – the most simple in large tonneau and demi-muids, only using small barriques for the most structured wine. Yields, as high as 70 hectolitres per hectare in the 1970s, have been severely reduced and are now usually between 35 and 45 hectolitres per hectare, giving the wines infinitely greater potential for concentration, complexity and balance. The whites are unusually good for Crozes-Hermitage, an appellation generally more successful in reds. The Pontaix white displays clarity and elegance, with notes of honey and white flowers. The red Pontaix is marked by rich, dark gamey notes over black fruit, yet also shows the elegance and refinement which is increasingly the signature of this estate.
