Spectacular proof that some of the very finest Champagnes come not from the cellars of the established merchant houses, but from the burgeoning ranks of smaller growers who are now marketing their own production rather than merely acting as suppliers to the big names. Madame Fourny and her two sons Charles-Henry and Emmanuel exploit 16 hectares of vines in the 1er Cru village of Vertus on the famous Cote de Blancs. The vineyards are planted 90% to Chardonnay and 10% to Pinot Noir with a relatively high average vine age, and subjected to a meticulous viticultural regime which is based on a combination of organic and biodynamic principles. The grapes are hand-picked. Only the first pressing is used, and the wines are subjected to a minimum of three years ageing prior to disgorgement, and a further 6 months “on the cork”. The house style here easily confirms the theory that the Chardonnay grape contributes the greatest degree of finesse to Champagne. The non-vintage Blanc de Blancs is full, rich and creamy, whilst maintaining great elegance and style, whilst the Rose displays elegant red and black fruit notes, with exceptional freshness. The Cuvée ‘R’ is vinified in small oak casks, and spends 18 months on the lees, then a further 4 years in bottle ‘sur latte’. Opulent and mellow, it is Champagne ideally suited to fine dishes.
