Perhaps the leading domaine in this predominantly sweet white wine appellation, which lies just outside Angers, and sees Chenin Blanc, together with some Sauvignon Blanc, Gamay, Grolleau and Cabernet Franc planted on schistous soils. There is a healthy proportion of old vines, some at 90 years, and a very reasoned approach to viticulture, with minimal or no treatments, cover crop between the vines, short pruning of the vines to achieve concentration, and hand-picking of the grapes, in up to 5 or more passes to ensure the grapes reach the cuverie at perfect ripeness.

The cuvee Trois Schistes comprises fruit with a potential alcohol of at least 17% before fermentation, which takes place, after a light pressing, in barrique. It shows honey on the nose, with a vibrant and crystalline layer of mineral-tinged fruit, with fresh and floral nuances. It has a beautiful weight on the palate, with lots of lovely sweetness and great acidity alongside the fresh, crystal-clear citrus flavours.
