The Fevre family oversee a fairly substantial domaine in Fontenay-Près-Chablis, of which the lion’s share is village Chablis (amongst which there is a plot of 60 year old vines bottled separately as Vieilles Vignes), but which also includes 10 hectares of 1er Cru Fourchaume, and smaller plots in Vaulorent and Mont de Milieu, and a magnificent 2.5 ha plot of 55 year old south-facing vines in the Grand Cru Les Preuses. The domaine was consolidated by Gilles’s great-grandfather after the First World War, though the familial roots amongst the vineyards of the Auxerre go back much further.
Gilles and Nathalie met whilst they were studying oenology at university. Gilles looks after the viticultural side of the business, whilst Nathalie presides over the goings on in the cuverie. They have been joined in recent years by their daughter Julie, who has a degree in agricultural engineering and a diploma in oenology from l’Université de Bourgogne in Dijon. Production here is reasoned – no synthetic pesticides, with only biological intervention where necessary, and they are certified to Exploitation de Haute Valeur Environnementale (HVE), which denotes reasoned production with minimal intervention, effectively one step below full organic certification.
These are benchmark Chablis – pure, incisive, mineral, with mouthwatering concentration, and have proven exceptionally popular with our customers.
